Super Power Strata

I made something delicious! And I wrote down ALL the ingredients and quantities! You can pick your jaw up off the floor now (I am notorious for not following/ recording recipes accurately). There's just something about breakfast baked in an oven that makes me nostalgic... on a rushed AM this wouldn't fly, but it was perfect for my sleepy Saturday. 



I call this new recipe Super Power Strata- it's closer to a strata than a quiche and it's PACKED with protein (just look at the ingredient list), but low-ish in fat and carbs so you won't feel too weighed down as you save the world one sumo squat at a time. 

SUPER POWER STRATA

6 slices turkey bacon, chopped
1/4 large onion, diced
3 slices whole grain bread of choice (I used Nature's Pride Double Fiber) torn into small pieces
1/3 cup plain 0% fat Greek yogurt (I used Chobani)
1/4 cup reduced fat cottage cheese
1/2 cup milk of choice (I used plain Light Silk)
3 egg whites, 1 egg
1 tbsp minced garlic
1/4 cup shredded cheese of choice (I used reduced fat Monterey Jack)

Preheat oven to 350F. On the stovetop, brown the onions and turkey bacon together. 

Lightly spray a baking dish (I used a pie dish, but a brownie pan or loaf pan would probably work, too) and fill with your bread shreds (rhyming is important). 


Mix EVERYTHING else together in a bowl EXCEPT the shredded cheese. Pour mixture on top of the bread shreds. Smoosh (highly technical culinary term) it all around so the bread soaks up most of the liquid, then spoon on the bacon/ onion mixture. Top with shredded cheese and bake uncovered for 25 mins. 


Try not to be jealous of my SUPER flattering pajamas. I know... It's tough. 

Remove from the oven and enjoy the proteiny goodness! Try to resist the urge to bench press the table until AFTER you've eaten.
