Tri-Bean Happy Soup

What's better than filling your belly, keeping warm, purging your cupboards and fridge and consuming a ton of fiber and non-meat protein? DOING IT ALL AT ONCE!

Brace yourselves- it's about to get yummy.

Tri-Bean Happy Soup


1- 15oz can black beans
1- 15oz can pigeon peas
1- 15oz can cannellini beans
1- 15oz can reduced-sodium veggie or chicken stock
1/2 can water
3 heaping tablespoons TJ's Roasted Eggplant Garlic Spread
1 tablespoon balsamic vinegar
1 roasted red pepper-chopped
1 teaspoon tahini
1 tablespoon Trader Ming's Sesame Soy Ginger dressing







Combine all ingredients in a pot- bring to a boil over medium heat- after 5 minutes reduce heat and simmer for 10 minutes. My friends, it does not get much easier than that. 

Serve with whatever deliciousness you have lying around- laffa, anyone?
