1 1/2 c whole wheat flour
1/4 c oats
1/4 c Sun Crystals (or the equivalent of 1/2 c sugar)
2 tsp baking powder
1/2 tsp salt
1 Tbsp milled flax seeds
1 cup chopped strawberries
1 egg
1/4 cup applesauce
1/2 cup milk of your choice (I used soy)
1 Tbsp vanilla extract
Whisk together wet ingredients in a separate bowl.
Add the wet ingredients to the strawberry mixture, fold in but do not over-mix!
Spoon mixture into a greased muffin tin. Bake at 375F for 20-25 mins.
Enjoy! This recipe made 8 muffins!
